Silverside with Horseradish Cream Sauce

Ingredients
3 thick slices of Simply The Best Corned Silverside
6 baby carrots, peeled
4 chat potatoes, whole
10 green beans
1/2 teaspoon of sea salt
1/2 teaspoon of ground black pepper
1 tablespoon of butter
1/2 cup of beef stock / bouillon
1 teaspoon of pesto
cream sauce

Cream Sauce
1/2 cup cream
1 teaspoon horseradish
1 teaspoon lemon juice
Seasoning
Preparation
- Place the three slices of Simply The Best Corned Silverside in a bowl, add beef stock or bouillon and heat in a microwave oven for 2 minutes.
- Peel the baby carrots. Add carrots and green beans to a saucepan of hot water. Blanch.
- Boil chat potatoes until tender. Strain and place them in a bowl. Add a teaspoon of butter and chopped parsley, and sprinkle with sea salt and black pepper.
- Melt the rest of the butter in a fry pan. Add pesto, baby carrots and green beans and sauté. Stir and season with sea salt and black pepper.
- Arrange on a dinner plate, and drizzle cream sauce over the Corned Silverside. Garnish with chopped parsley.
For Variety:
- Substitute cream sauce with mustard, brown sauce or mayonnaise
- Serve the warmed Corned Silverside with boiled buttered pasta
Antipasto Pastrami Platter

Ingredients
10 slices of Simply The Best Pastrami
10 asparagus spears
10 black olives, pickled
5 artichoke hearts, halved
1 green capsicum, sliced in half
1 red capsicum, sliced in half
1 yellow capsicum, sliced in half
2 tablespoons of sun-dried tomatoes
2 tablespoons of pesto
2 teaspoons of sea salt
1 teaspoon of black pepper
2 tablespoons of olive oil
1/4 of a lemon
Preparation
- Clean asparagus and peppers. Combine in a bowl with half the olive oil and pesto and season with black pepper and sea salt.
- Grill the vegetables until cooked. Leave vegetables to cool. Pour the rest of the olive oil over the top and squeeze the lemon over it.
- Arrange slices of Simply The Best Pastrami decoratively on a platter.
- Place the olives in a small bowl and arrange the rest of the ingredients decoratively on the platter.
Serving Idea:
- Serve the platter with Mediterranean style dips (e.g. hommos) and plain (water) crackers.
- Add some fresh vegetables to the platter e.g. slices of cucumber, carrot or florets of broccoli
Barbeque Bacon Open Sandwich

Ingredients
3 rashes of Simply The Best Bacon (rindless)
1 handful of rocket
1 handful of lettuce
1/2 tomato,sliced
2 slices of white bread
1/4 avocado, thinly sliced
1 tablespoon of butter
1 tablespoon of mayonnaise
1 teaspoon of sea salt
1 teaspoon of black pepper
1 tablespoon of olive oil
Preparation
- Spread the butter on both slices of bread and place on grill. Leave until grill marks appear.
- Grill Simply The Best bacon until crisp.
- Combine rocket and lettuce in a bowl and mix with olive oil. Season with sea salt and black pepper.
- Spread mayonnaise on the bread and top with rocket, lettuce, tomatoes avocado and grilled Simply The Best Bacon.
Serving Idea:
- Serve on a plate with potato wedges or potato salad
Crispy Bacon Breakfast

Ingredients
4 slices of Simply The Best Bacon
2 large eggs
1 handful of baby English spinach
6 cherry tomatoes
1 tablespoon of butter
1 teaspoon of sea salt
1 teaspoon of black pepper
1 tablespoon of olive oil
1/2 a lemon
Preparation
- Place bacon on a pre-heated grill and cook until crisp.
- Melt half the butter in a hot pan, and fry the eggs.
- In a separate fry pan, melt the rest of the butter, ad pesto and stir. Add cherry tomatoes and sauté. Season with sea salt and black pepper. Stir.
- Lift fried eggs out of the pan and arrange decoratively on a plate with the sautéed cherry tomatoes and grilled Simply The Best Bacon.
- Place baby spinach in a salad bowl. Pour olive oil and lemon juice over the top. Stir.
- Arrange baby spinach decoratively on the side of the plate.
For Variety:
- Try different variations of egg dishes (e.g. an omelette with sliced bacon mixed in. Yum!)
Ham Salad On A Crusty Baguette

5 slices of Simply The Best Leg Ham
1 handful of watercress
1/2 a medium sized cucumber
1 baguette
1 tablespoon of butter
1 teaspoon of sea salt
1 teaspoon of crushed black pepper
1 tablespoon of Dijon mustard
Preparation
- Spread butter on the baguette and place on the grill. Leave until grill marks appear.
- Place watercress in a salad bowl. Pour olive oil and lemon juice over the top. Toss.
- Arrange cucumber, watercress and Simply The Best Leg Ham on the baguette.
- Dollop some mustard on top and a sprinkling of sea salt and crushed black pepper.
For Variety:
- Use one of the many varieties of bread. Cheese topped buns are also delicious!
Leg Ham Caesar Salad

Ingredients
5 slices of Simply The Best Leg Ham (shaved)
2 handfuls of coz lettuce
1 egg, boiled
3 tablespoons of croutons
2 tablespoons of shaved Parmesan cheese
1/4 cup of Caesar Salad dressing
1 teaspoon of sea salt
1 teaspoon of crushed black pepper
Preparation
- Wash coz lettuce and dry. Cut and place into a salad bowl.
- Cut the boiled egg into wedges and combine into the salad bowl with Simply The Best shaved ham.
- Pour Caesar Salad dressing over the top and mix well. Season with sea salt and crushed black pepper.
- Arrange on a plate and garnish with shaved Parmesan cheese.
For Variety:
- Substitute coz lettuce with iceberg lettuce, and change the Caesar Salad dressing to Italian, Thai or Balsamic Vinaigrette for a lighter, healthier option.
- Add some al dente cooked vegetables (e.g. green beans, spinach, carrots and/or potatoes for interesting textures and colours.
Bacon Stuffed Avocados

Ingredients
8 slices of Simply The Best Bacon (rindless)
4 avocados
4 tablespoons of lemon juice
1/2 a cup of butter
1/4 cup of brown sugar
1/4 cup of tomato ketchup (sauce)
1/4 cup of white wine vinegar
Soy sauce
1 teaspoon of grated Swiss cheese
1/2 teaspoon of salt
1/2 teaspoon of black pepper
Preparation
- Dice Simply The Best Bacon and cook until tender.
- Cut each avocado in half. Remove the pits and brush lightly with lemon juice. Fill with cooked Simply The Best Bacon.
- Combine butter, lemon juice and all other ingredients (except cheese) into a small saucepan. Simmer and stir until all ingredients are evenly melted.
- Drizzle the sauce over each avocado.
- Sprinkle grated Swiss cheese over the top
Smoked Ham, Tomato and Basil Sandwich

Ingredients
75 grams of Simply The Best Smoked Ham, sliced
3 tablespoons of butter
1 tablespoon of fresh basil, chopped
4 slices of bread
1 tablespoon of fresh basil sprigs, sliced
1/2 tomato, sliced to garnish
1/2 tablespoon of salt
1/2 a tablespoon of ground black pepper
Preparation
- Melt butter and mix together with chopped basil. Spread each slice of bread with the mixture. Place two slices of bread to a plate, buttered side up.
- Place Simply The Best Smoked Ham on the bread and top with some of the tomato slices and seasoning.
- Place remaining bread slices over the top.
- Press bread slices together lightly and cut diagonally. Garnish with basil sprigs and tomato slices.
Ham and Cheese Pie

Ingredients
500 grams frozen pie dough
200 grams off Simply The Best Ham, chopped
200 grams of Swiss cheese, cubed
4 green onions, chopped
3 eggs
Preparation
- Roll the pie dough, place on 9cm pie plate.
- Cut remaining dough into thin strips.
- Combine remaining ingredients until ham and cheese are well coated. Pour mixture into a pie plate.
- Arrange cut strips of pastry on top of the mixture.
- Bake in a 160 oC oven for 55 minutes.
Hawaiian Baked Beans

Ingredients
4 rashes of Simply The Best Bacon
1/4 cup of pineapple chunks
1 cup of baked beans
1 cup of kidney beans
1 cup of lima beans
1/2 teaspoon of dry mustard
1/2 teaspoon of cloves
1/2 of brown sugar
Preparation
- Combine all ingredients in a large casserole pot. Bake at 160 oC for four hours. Stir regularly to keep mixture from drying out.
- Serve on a plate and garnish with parsley or sprigs of basil.
